This team is responsible for a wide range of food and non-food functions, including catering, equipment, and amenities for inflight dining and special events.

As a Food Technologist in the Food & Beverage Design team you will ensure the effective development and validation of food products and production processes that maintain Emirates standards for quality, safety, and customer satisfaction. You will work closely with culinary and operations teams to convert innovative menu designs into practical, compliant, and efficient large-scale catering solutions.

In this role you will:

  • Provide specialist technical support to product and process design to ensure alignment with Halal compliance requirements, as guided by the Food Safety & Halal Compliance team.
  • Apply food science and sensory expertise in collaboration with chefs and culinary development teams to assess and optimize the sensory attributes (taste, aroma, texture, appearance) and ensure recipe meet defined quality standards.
  • Design, Develop and validate product-level processes to ensure recipe integrity, quality consistency, and food safety during production, reheating, and high-altitude serving conditions.
  • Maintain accurate technical documentation and product specifications, including recipe development, preparation methods, ingredient measurements, and critical control points. Ensure process validation records support compliance with defined standards.
  • Evaluate and recommend ingredient alternatives based on technical suitability, innovation potential, sustainability consideration, and cost efficiency, providing expert input to support informed decision making
  • Partner with the Concept Development team as a technical specialist to conduct first batch productions, monitor production line performance and identifying process optimisation opportunities.
  • Drive continuous improvement and staff capability development through training, data analysis, and alignment with evolving regulatory and Halal standards.
Qualification

To be considered for this role, you must meet the below requirements:

  • Hold a Bachelor’s Degree or Honours (12+3 or equivalent).
  • Have 5+ years of inflight service or inflight catering experience.
  • Demonstrate experience in Food technology recipe development and demand planning tools (SAP, SpecPage, Nutritics, ESHA Genesis, ChefTec, Apicbase, MasterCook, ReciPal, ComBase Predictor, SAFEFOOD 360, TA.XTPlus, CompuSense, EyeQuestion, LIMS).
  • Demonstrate experience in recipe standardisation and upscaling for commercial or institutional catering, menu management, recipe creation, and planning processes, cook/chill technology in high-volume food production, and airline catering operations, including altitude-based reheating constraints.
  • Bring hands-on roles in hospitality or food service, ideally aviation catering, and the ability to work across complex, data-driven operations and hands-on culinary environments.
  • Exhibit effective communication and stakeholder management, with strong organisational and project management abilities.
  • Possess analytical, problem-solving, and decision-making skills.
  • Show creativity in generating new ideas and combining elements for value creation.
  • Demonstrate proficiency in data and digital systems for recipe metadata and compliance documentation.
  • Thrive in high-pressure, fast-paced settings, while remaining detail-oriented with a passion for blending culinary excellence and scientific precision.
